Title | Inhibitory Effect of Green Tea Catechins on Human Salivary Amylase Activity |

Details | In order to investigate whether catechins contained in green tea has a salivary amylase activity inhibitory effect, human saliva amylase was reacted with a substrate solution (0.5% starch solution) prepared by stepwise diluting a high concentration catechins drink. Also, the substrate solution prepared by adding the chemical product catechins extracted from the tea leaves to the same concentration as the high concentration catechins drink was examined in the same way. As a result of examination with a substrate made with a high concentration catechins drink, the inhibitory action of green tea catechins to human salivary amylase activity tended to increase in a concentration-dependent manner. These results suggested that green tea may contain other ingredients that inhibit salivary amylase activity. |
