| Details | 豆・いも類の利用状況について、中国・四国9県の42地域に在住する479名を対象として質問紙調査を行った。調査データを統計処理して、中国・四国地方における豆・いも類利用の特徴を明らかにした。特に、大豆および大豆加工品について食文化的考察を加えた。
